Takomasa
Takomasa—which nestles in an alley one block behind the shopping arcade that stretches through the bustling heart of the city—is a restaurant that serves traditional and original kuwayaki dishes. Kuwayaki is a type of Japanese-style cooking method whereby the raw materials and ingredients are grilled in between a pair of iron plates (or simply on an iron plate). Using the kuwayaki method, the excess fat contained in the meat is extracted and eliminated since the meat is pressed by the weight of the iron plate. Kuwayaki dishes can therefore be enjoyed as healthy foods. Almost 50 years have passed since this restaurant was originally founded. It was the original owner of Takomasa who first introduced kuwayaki, which originally hails from Osaka, to Sasebo. Today, at the restaurant, the second-generation owner proudly displays the kuwayaki skills he inherited from the original owner.
Owner’s comment
Besides beef, pork and chicken, seafood and vegetables can also be cooked by the kuwayaki method. Since it offers a wide range of options to choose from, kuwayaki allows restaurants to easily and flexibly respond to requests from various customers. At Takomasa, we also accept requests for vegetarian meals, so please feel free to make such requests at any time, and please do not hesitate to let us know if you have any other special dietary needs or particular likes or dislikes in terms of food. For flavoring our kuwayaki dishes, we utilize a secret sauce that we have continued to use for 50 years. This sauce has been praised for its relatively sweet flavor and a taste you will never tire of.
