Fujinaga Sushi restaurant
Fujinaga Sushi, a long-standing Japanese restaurant established in 1955 (Showa 30), originally started as a fresh fish shop. Today, this sushi restaurant purchases the seafood it uses directly from fish markets, and all the seafood served in the restaurant is carefully selected by its second-generation president, who boasts a 40-year career as a chef. Inside Fujinaga Sushi, there are spacious tatami rooms with neatly arranged tables and chairs. You can take your time enjoying the restaurant’s dishes while relaxing in comfort (not needing to sit directly on the tatami floor).

At Fujinaga Sushi, it is not just seafood that is popular as sushi neta (sushi toppings); many kinds of meat have also earned popularity as sushi neta. This restaurant serves a wide variety of food items that even customers from abroad who don’t like raw fish can enjoy, such as meat dishes and sushi items using cooked fish. As far as the raw materials and ingredients used for the dishes are concerned, on a daily basis, the restaurant puts great effort into producing and consuming local foods. For example, it uses wagyu (Japanese beef) raised in Nagasaki (the local region where the restaurant is located) and pasture-raised pork. The roast beef and roast pork that Fujinaga Sushi cooks with a steam convection oven after adding an elegant flavor using soy sauce as a base have been specially prepared as new neta (toppings) for sushi served at the restaurant, and sushi with these new toppings has been very well received.
